Mycelial protein food, one disk, freeze dried and consolidated with isobutylmetha-crylate polymer solution, 5 per cent in xylene, made by Rank Hovis MacDougall. Freeze dried and treated, preserved by Archaeological Research Centre, National Maritime Museum.

This breadcrumbed burger is one of the oldest samples of Quorn. Made in 1981, when it was still a lab experiment – and before it was branded ‘Quorn’. Today, burgers are one of many Quorn meat-substitute products, from sausages to mince.
