The Westphal balance is a scientific instrument used to measure the density of a liquid relative to the density of water - known as the specific gravity of a substance. This particular balance was used to test the specific gravity of fruit jelly at the East London jelly manufactuers, Bard Brothers. Remnants of red fruit jelly are still visible on the glass testing tube.
